Behind the Scenes: Fresh 'N Lean Vegan Meal Delivery Service

There's nothing I love more than a vegan entrepreneur pouring their heart, soul, blood, sweat and tears into a project they are passionate about. That's why I do interviews with the likes of Jessie from EatPastry and Stephanie from Seabirds. This is also surely the case with the founder of Fresh 'N Lean vegan meal delivery service.
A couple weeks ago, I had the privilege of visiting the Fresh 'N Lean kitchen, where I got to chat with the owner about his mission, taste a bunch of delicious food, and see how a meal delivery service works from the inside. Here are the results:

I was handed a sample of their granola upon arrival, and it was really good, but it's simplicity is where it really shines. Almonds, sunflower seeds, walnuts, and oats lightly coated in maple syrup for just the right amount of sweetness. This is the daily breakfast staple for all Fresh 'N Lean meal plans.
Next I was able to try the quinoa pasta with pesto (opening picture), and it was out of this world. I've recently fallen in love with gluten-free quinoa pasta, and the pesto was nice and garlicky the way I like it. Fresh 'N Lean has a classicly trained head chef straight from Italy and it really showed in this dish.

The next dish I was handed was a full serving of their risotto, which features two kinds of beans, 3 kinds of grains, as well as celery, onions, carrots and broccoli. It was a mildly seasoned dish and the owner told me they like to keep their seasoning mild so you can customize your meal at home to your preferred tastes. The combination of grains really stood out to me (I really like whole barley), and the semi-soupy consistency provided by the broth made it very easy to consume the whole portion in minutes as I chatted away.

Another of their entrees they were preparing for the week was the lentil kale soup, which looked really good but I didn't try since I had already had a full meal and a half by the time I saw this dish. I can only assume that it was just as tasty and packed with whole foods nutrition as the rest of the dishes I tried.

Needless to say, I cleaned my plates and left the Fresh 'N Lean feeling completely satiated but not at all stuffed.
Fresh 'N Lean seems to be pretty affordable for the quality and convenience it provides, and as it builds a larger client base will only go down in price. They ship everywhere in the US via next day air, and will provide customized plans for those with special dietary needs or allergies. Everything can be done gluten-free, and you can order five day or seven day plans, each with three meals a day.

It is better to cook at home. Pasta is always great but also I think you need to add mushrooms and some meat.
